Chicken Salad

The perfect summer dish that also works for Xmas

Slightly cooked chicken breast chopped in small cubes and mixed with roasted mushrooms and a little garlic before its tossed in our own dressing made from crème fraîche, mayonnaise, Dijon mustard, sweet curry, salt, pepper and a little lemon juice and lemon zest.

Top with slices of green asparagus and serve with water crest and rye or wheat bread as you choose

It has taken Thomas years to nail this recipe the way he likes it. Fortunately our friends like it too 🙂
